Edit: So I've discovered that this only happens when I attempt to write single channel images using write frame. If I write 3 channel 8-bit RGB images, the output video turns out fine. For the template matching, you also need to take out the CV_ prefix and use TM_SQDIFF. Looks like it works for all of the others too ( TM_SQDIFF_NORMED, TM_CCORR, etc.).
